obviously i intend to use them within the realm of breakfast (english muffin sandwiches or some form of benedict).. but how would you react to the concept of maybe putting one on top of a filet of blackened salmon? It is my go-to dish these days and for some reason i feel it could be interesting to pair it with a delicately poached egg...

I believe you should try this. I myself always try adding new things to my food. I either like it or I don't and never do it again. You can't lose in this situation. Go for it.

I tried out the french toast with cheese this very morning. It was ok although I think the cheese I got was too mild in that it changed nothing to the flavor really but the texture was palpable.

I think I will try it again with thicker bread and perhaps a stronger cheese just to get some sort of flavor contrast.

definitely an idea to explore further.

yeah. Also on weekdays I make the french toast with just regular sandwich bread so already it's a strike. I'll give it a shot when I have a chance to get some thicker slices and toast them properly beforehand.

I may have put too much syrup. What I should have done is to taste it before even putting any syrup at all since the latter is clearly the dominant flavor in this deal.
