Early 90's I drove up to Chicago to see the Isles play against the Hawks at the cave... I get to Chicago and My buddies and I order this beautiful pie.. we were starving after the long drive... we see it come out of the oven and it looks perfect... We it back to our hotel room, open it up and it was a round pie they cut in a grid (like they were cutting a Sicilian) .. some slices were just crusts, the center slice you couldn't even lift.. i was pissed.

I'm happy when I find mediocre pizza outside of NY. There are exceptions of course but they rarely come close. |

I have friends that live in Hermosa Beach, CA and there's a pizza place down by the pier that (allegedly) imports tap water from NYC. I have no idea if that's truthful or not but it was damn near as good as any pizza I've had around here. Best I've ever had outside of the usual tri-state area. |

They probably import NYC tap water to put in the dough. |

Yea importing NYC tap water is common for pizza dough. Apparently it gives the crust a taste no other tap water can provide. |

Well it works, because that was the damned closest it's ever come to real NY pizza. |

I worked at Sun-up Pizza in Jericho during the mid 80's, the owner Cono, would drive to work each day with 5-6 large jugs of water from his home in Brooklyn... after a few years this was done less and less and the pizza never changed.

It might just be a gimmick that pizzerias outside of NY use to attract people to come but a lot of them actually do it. Can't say I've ever noticed an actual difference...I think NY pizza is so awesomebecause a lot of places here use the highest quality ingredients possible. It's like gourmet food rather than just a slice of pizza. |

Ive lived in the south (keys, Atlanta, Miami) and every time someone tells me its great pizza or its just like NY pizza (which is usually from a former NY'er) it isnt. I think there was one place in atlanta that came close to mediocre ny pizza other than that it all tasted closer to dominoes than anything else. Maybe they've come a long way? They just started pizza by the slice in atlanta when I was living down there. It was all the rage. Line out the door every day. Maybe it progressed into actually being worth waiting on that line haven't been down there in yrs? |
