It's closer to a buck a wing now if you go to places like Duff's, 911, Mammy's, Bar Bill, ect. The issue is the price is close to $2 a lb. You used to get 6-8 wings per lb depending on size. Now it's closer to 4-6 depending on size.

We had wings a week ago that were so huge they took 25 mins to cook and were about 5 per lb. The issue is you have to have the breast sold prior to slaughter. When the demand for the breast goes down the chicken gets bigger do to them not being processed. Thus making the wings huge and getting less of them in a 40 lb box.

At one point you used to get 6 buckets per 40 lb box. You're lucky to get if you get 4 1/2 per.

So when ordering wings one shouldn't get sticker shocked at the cost.

No idea what the Heron is but a buddy of mine and I split the internet packages and did a few parties for 2 of the shows. The second Levi Stadium show and the first Chocago one. For Chicago we had nice weather and we had an outdoor screen setup with a projector. Good times.

When I was 16, in 1980, my first job was cooking at a Kentucky Fried Chicken.

Cooks had to "break" 8 crates of chicken every shift. Crates included twenty bags, there were two butchered chickens in each bag (4 drums, 4 thighs, 4 breasts, 4 wings, 2 keels). We had to separate 2 wings from the rest of the bird, and cut the 40 whole wings into 80 pieces.

Cook the wings in the deepfryer at 385 for eight minutes, the shake in a gallon jar with sauce: mild = 1/3 franks, 2/3 butter; medium = 50/50; hot = 1/3 butter 2/3 franks. I used to throw some garlic powder and worcestershire in mine to make them unique.

You could never deep fry a wing at 385 in 8 minutes today.
