Directions:
In a large pot, pour in 1 and 1/2 inches of vegetable or canola oil. Attach candy thermometer so it's in the oil, but not touching the pot. Heat on medium to 350°F.
The oil temperature may drop when the wings are added. Place a maximum of 8 wings in oil at one time. Try to keep oil at 350-375°F or if temperature keeps rising, take off heat to a cool element for 1 minute. Monitor.
Flip wings occasionally until well browned and the chicken's internal temperature reaches 165° F on an instant-read thermometer, 8-10 minutes. Place on a plate with a paper towel to remove excess oil. Toss with sauce. Serve immediately. |

I was gonna chime in with exactly this....except I add a tiny amount of butter to the sauce.
I also fry frozen french fries and beer battered fish and they are spectacular!
edit: I dont trust meat thermometers...over cooked stuff a few times relying on it. |

Guess Im just used to it. Love to cook, and I have 3 pretty sweet air filters in my house so if I stink up the place I crank those overnight and by morning any smell is gone.
Cooking good stuff saves so much money to be used on beer or wine, but the downer for me is the dishes and mess...rule is f I cook my wife cleans up, and vice/versa.
I make Peking duck once ar twice a year and Ive never had it at a restaurant that was anywhere close. |
