Yeah, must suck for you. You probably don't even see a difference in your account after buying for your family.

(seriously, I say that out of jealousy because I'm so broke because of xmas shopping. But I think I'm done at least)

I wish. We have a budget and a list to follow. My wife already bought a few things this week but we want to wrap it up this weekend to avoid shopping malls after that.

I haven't done a mall for shopping in about 10 years. Online it. That's what I did for the kids. Found the Boy a composite bat, box of Babe Ruth cards a series from Leaf I think, and a some fancy puzzle cube. All online. Same with the Girl. Her mom isn't gonna like what she's getting, but the Girl asked for it. Add some lame little things here and there. I'm laughin

That's because you're banned from every (frank)ing mall within a ten miles radius.

How much did you pay for your main knife that you use? We all have that one butcher knife I think it's normally called. Not the long thin chefs knife. You know what I mean. Just curious what a pro would pay for one

I know they do. I bought a kitchen aid set there about 6 years ago. But I'm curiuos what a chef would spend on one.

The steel is what you pay for I'm guessing. Because I can see little bits missing from my knives along the edge.

Unless of course this is you being funny and making fun because of a previous Crappy Tire post about pots and pans.

I think you're alright. Then again it's Friday, 8:00 and I'm alone and already drunk...so...might not count for much

It's all about the steel. Although when made by hand the craftsman is important. Better ones can make great knives using cheaper steel. It's pretty complicated stuff.
I've been to Japan and bought some there, was a really cool experience.

Actually, no. Properly forged steel is significantly harder, as it has been tempered more carefully; the really expensive ones often manually, as opposed to the majority of mass produced blades. If you want a decent knife that will stay sharp longer, go with a mid range ceramic knife. You need to be a bit more careful in the handling, but they won't rust, and take much longer to dull. Get a ceramic knife sharpener at the same time, though, as your standard knife sharpener won't do the trick.

All hand forged knives are high quality, they don't use poopty steel.
What I mean is there's different grades of really good steel.
Pure carbon goes blue, white then yellow, but they are all great. A yellow #1 will be expensive, but a blue #1 would be really (frank)ing expensive. Like choosing between a BMW or a Lamborghini.
Give a master craftsman yellow and he'll make a better knife with it than a mediocre craftsman would with blue.
But it gets way more complicated, there's some pretty good websites that go into further detail.
