Does anybody know a site where you can see how many available contract spots the Sabres have left for prospects/which prospects are signed?

I can't find anything

I would say no, most teams have no problem carrying around 45+ contracts. Any overflow just goes to the ECHL. He's in a curious situation right now. If he signs an AHL/ECHL deal, the Sabres essentially lose his rights and the contract is not considered one of their 50 pro contracts. I don't think they're comfortable yet signing him to an ELC, so his best option as outlined in the media would be to return to a junior team willing to spend an import player spot on an overager, considering he's already 19.

You can have up to 50 total, so there really isn't a limit on how many non roster players you can have.. per say.

Your NHL roster is typically around 22. So your non roster would be 28 give or take a few.

Perhaps. He only scored 50 points as an 18 year old in junior is 64 games. He's a small offensive guy and to be able to play in the pros, a guy like him probably has to be padding his stat line a little more. This regime seems to value offensive creativity no matter what physical size you are, so I'm willing to bet they'll be pushing for him to join a CHL team to see if he improves a lot. I wonder if they can retain his rights if they send him overseas to play in the superelit or SHL.
