I'm preparing Chinese Golden Prawn Balls: minced shrimp, salt pork (un-smoked bacon), and water chestnuts that get stirred in a marinade of egg-white and some sugar. I form them into spheres and coat them in small cubes of (slightly dried) bread then deep fry at 350 until golden brown. Dipping sauces include (but are not limited to): thin and thick soy sauces, oyster sauce, hoisin sauce, siraccha, and maybe some Chinese mustard (yeah, I'm feeling a little playful). Side dishes will be green bean and bean sprout stir-fry and some cauliflour.
