Going down that road: seasoning a (prime-cut) ribeye with anything other than salt, pepper and a sprig of rosemary should be punishable by death.

That's not bad, the Provolone that is. The poors from trash philly use cheese wiz, your better than that Chiefs.

I'm a man of the commoner and I will appreciate their tastes.

Like I said earlier, I haven't had a properly-prepared cheesesteak in a long time...so I can certainly live without it...but I do enjoy it.

I don’t know, you could probably talk me into putting Montreal Steak seasoning on just about any red meat.

Only thing I use it for with ribeyes is to throw it on top when I finish them in the oven.

Literally all I do is:

- Season the hell out of it with salt and pepper and let them sit out at room temp for at least an hour

- Coat a cast iron skillet with some avocado oil (it's a little pricier, but has a much higher smoke point than vegetable/canola/anything else) and get that thing rip-roaring hot

- Sear the steaks, including the sides/fat-cap part, until they're nice and brown/crispy

- Throw a pat of butter and a sprig of rosemary on top

- Finish them at 400 for like 10-15 minutes and them let them rest at least 5-10 minutes


Just my personal preference, but I see no reason to cook a high-quality steak any other way.
