yeah but it's significantly warmer down there. it's amazing that New York City is just a few hundred miles south and their weather is night and day compared to Montreal

They are, I love mushrooms. One of my go to pasta dishes is sautéed mushrooms, garlic, rosemary, thyme, extra virgin olive oil, lemon, and shaved parmesan. Finish with a bit of butter.

But in their chili, it's texture is just...almost rubbery. Not great. I can see it in a white bean chicken chili, but not a beef chili.
