Dude, ever make garlic confit with herbs? Good olive oil, herbs of your choice, and whole cloves of garlic. Cook at 250•F for 1.5 hours. Having guests, wanna be fancy, or just get fat? Throw an entire round of Brie in there as well... Then you can smear roasted garlic, tasty EVOO, and oozing cheese all over crusty bread.
