Really is. Cook it like I mentioned above, but cover the exposed top/inside of the chicken with cubed pancetta. As it all cooks, the fat from the pancetta bastes the chicken. When all cooked, use the crispy pancetta lardons as your bacon bits in a Caesar salad.
