Good afternoon, 'Murica.

Going back to the lasagna convo from this morning, I'll still take mine.

Homemade meat sauce, using Italian sausage and extra lean ground beef.
2 different layers of ricotta (fresh Parmigiano and beaten egg with the ricotta to tighten it up while it cooks)... One mixed with sauteed spinach, garlic, and chili; the other with sauteed baby portabella and garlic.
I don't do a bechamel on top, I go all in on cheese: fresh buffalo mozzarella rounds, more Parmigiano, and asiago. Drizzle a bit of fresh basil pesto on top after it comes out, just before serving.

I only do it on special occasions, as it's a pain in the ass, but damn, so worth it.
