You shouldn't ever have to flip an omelette.

Use a 12" pan and medium heat

Butter the pan by tilting it to coat the sides and bottom.
Pour in the egg and let it start to solidify (you can see it) then start gently tilting the pan similar to how you coated with the butter.
Once it starts to solidify (no translucent parts and the edges aren't running anymore, put your filling in the middle of the omelette. Cheese goes down first.
Then fold the edges over the middle to make a three fold. Put more cheese over the fold if you want.
Slide it onto a plate.

Eat that poop.

That being said, I feel some people are too pretentious about "making the perfect scrambled eggs"... I've seen recipes that call for cooking them on extremely low heat for over half an hour to get the consistency right.
