i always think of gravy as a sauce created from the runoff of your components with stuff added to thicken and flavor. Sauce to me is something made separately from the main components and added later.
is this different in other places?

I'm not sure .. a lot of sauces are made with the drippings and scrapings in the pan with some wine or vinegar added.

at my italian grandmom's house... tomato sauce is sauce
however - if you cook beef, pork, sausage etc in the sauce...it shall be known as gravy
