Hot dog with Nathan's bigger than the bun frank on a potato roll with sauerkraut and spicy deli beer mustard. Followed by a sour dill picklesicle, and a PBJ with Welch's natural strawberry spread + natural JIF (for desert, I guess). Actually quite filling, as well as nappy-inducing on such an unseasonably warm day.

There are those ready-to-freeze tubes that can be bought from the grocery store. I found that they are nothing but the brine. So you can save yourself the expense by keeping the leftover brine from the pickle jar and just pouring that into your popsicle molds or ice cube trays. However, I like to go one step further by using the actual pickle.

My method:

Any pickles are acceptable, but my favorites are dills. I always have a jar of dill spears in our fridge.

About 6 spears (equivalent to 1.5 medium-sized whole dill pickles) are needed to fill our 4-slot popsicle mold, with just a little leftover for snacking or whatever. YMMV depending on what vessel is used for freezing.

I chop the pickle spears up into little pieces (still much larger that relish... actually about the size of game dice)—skins included, but it depends on preference—and put them into a blender. I add just enough brine to cover all the air-voids in between the choppings and blend well on the highest setting until it's a smooth, shake-like consistency (never mind the large skin bits in the photo, I got a little lazy but the rest was still sufficiently blended before freezing).

Pour into the mold or ice-cube tray, freeze, and that's basically it.

To add a little bit of a sour punch/kick856 to it, I also use a little food-grade anhydrous citric acid before blending. Unsweetened lemon or lime juice may also be used, but I always have the FGACA lying around. Use it sparingly, just a Salt Bae pinch, as the FGACA is strong stuff:



This is the perfect snack/treat for a hot day. I read somewhere that pickle brine (which actually has very little salt compared to my expectation of what a regular brine solution is) is very good dehydration recovery drink (besides water). So the frozen version is also a good way to also cool down. Plus it's healthier (less sugar) than regular fruit-flavored pops. And it's surprisingly tasty as dessert-time treat.

Notes/Remarks:
• If blended well enough, the brine should not separate from the pickle bits.
• Having the right amount of brine is essential, as the vinegar in it prevents the water in both the solution and the pickles from crystalizing too much. I'm not sure of the ratio, but my SWAG is maybe 30-40% brine (60-70% pickle).
