Preheat oven to 350

Cut a lemon in half, then again - put 2 quarters in the cavity.

Take room temp soft butter (1/2 stick), olive oil (3 glugs), and 1/2 a handful dried Rosemary, sage and thyme - stir it all together with a pinch of salt and black pepper. Slide your finger between the breast and the skin slowly to make a pocket.

Stuff the pocket with 1/2 the butter herb mixture, and put it in the oven (tying the bird is optional).

Cut up small potatoes (you can buy them in mix, cut them in 1/2), a red onion, and a carrot (or whatever, really - parsnips are good, also garlic cloves) - throw 'em in a bowl with the rest of the herb butter, add another pinch of salt and one glug olive oil. Stir it up, take the chicken out of the oven (probably been in about 10-15 mins by now) and dump the veg into the pan, spread it out a bit.

Stir every 30 minutes. For a 4 lb bird, should take you in the area of 1 hour 45 mins.

Take it out, cut it up, scoop the veg into a bowl, done.
