My Mom -- God bless her beautiful soul -- used to make all sorts of Pasta concoctions when I was a kid... and being Friday's and Lent forced her be imaginative, she made some delicious vegetarian Pasta dishes.

that does look good but i'll be honest i really only put up with those types of shells in chicken soup. They are too difficult to eat with a fork in a normal pasta scenario

The Shells are perfect to pocket the chickpeas or peas and gravy... Simple use of a table or soup spoon picks up the little pockets of joy.

But normally I'd rather have a form of spaghetti myself... That said, I do concede to different recipes and what the dishes call for.

Carbonara is the king of pasta dishes

Not made with spaghetti, though. Make it with gemelli.

I have never been a fan of Gnocchi of any sort -- not even sure if it is actually categorized as a Pasta -- BUT a couple of years back while getting back to my roots in Sicily we stopped in Taormina where the wife ordered Gnocchi Gorgonzola at a restaurant that was recommended to us... It portions was humongous and being on a Tour, doggie bags were not a viable option... I finished my meal but the wife was to full to finish hers... I took a forkful of the Gnocchi Gorgonzola and was floored and wolfed down the remaining dish... wanting more.

The dish was one of the best I have ever had IN MY LONG LIFE... and please keep in mind that I do not normally like Gnocchi... Sicily's Cuisine was easily and by far the greatest Cuisine I have ever had, and I did not have a bad meal the entire to week trip, but for one Pizza in Palermo where the crust was like cardboard, but the top was fine... Their ingredients were always so fresh and full flavored, and their seafood was unbelievable.

Anyway, the Gorgonzola sauce was so rich and flavorful... and the Gnocchi so tender with a texture I have never run across prior nor since... My mother's family were from Sicily and they cooked fantastically; her Lasagna was by far the best I've ever had... so unbelievably and sinfully rich.

... My mouth was literally watering as I typed this.
