The team accounting structure isn't designed to make money. There are a lot of companies like that.

Because the restaurant volume is not insignificant, and they buy in bulk. Individual buyers typically buy in 2-3 bottle at a time (sometimes a case). Not to mention they tend to keep buying the same bottle or brand repeatedly. When going out to a restaurant they order what is available on the menu. Some of the smaller producers don't sell through grocery stores (or any stores) or limited local restaurants and thus they don't have the distribution routes to sell their products.
