Actually, for filet mignon, I pan sear them in butter, rough chopped garlic, and fresh thyme sprigs while basting them until there's a good crust on each side. Then, in the oven at 400 for 6 or 7 minutes in the pan I seard them in. Take them out and let them rest for 7 or 8 minutes. Perfectly medium rare from top to bottom.

Large steaks like ribeye or porterhouse go on the grill.

You gotta get prime, not choice. Look at it in the counter and see the marbling with white dots of fat throughout it. No gristle or silver skin. You'll get a great piece of meat that's super tender and huge flavor. Not quite like a ribeye, but you trade a small bit of flavor for tenderness.

I know. Love that char that gets on it from the fire. Nothing beats that. Heaven smells like fresh basil and tastes like perfectly grilled ribeye.

Depends where you live, I suppose. I'm in northern Chester county and I can get some good steaks less than $20 a pound, but not much these days. Crazy inflation now.

I’ve heard about pan searing in butter but have never tried it. I must admit I’m more comfortable using grill. I love my tenderloin but try and switch it up…I am also a Ribeye fan as well. Will have to try pan sear.
