I’ve heard about pan searing in butter but have never tried it. I must admit I’m more comfortable using grill. I love my tenderloin but try and switch it up…I am also a Ribeye fan as well. Will have to try pan sear.

Do it. I have carbon steel pans but cast iron works perfectly well, also. Season the steaks with salt (not too much) and put them in the fridge for 2 hours. Preheat the oven to 400. Heat up the pan until it smokes and then put a tbs of avocado oil (high smoke point) in the pan. Season the steaks with fresh ground pepper. Put the steaks in the pan and once they are searing well, drop in a half stick of butter cut in slices and add the thyme sprigs and garlic. Let it go while it sizzles and look at the sides of it. Once you see it start to cook up the side just a little bit, turn them and start tilting the pan to get the butter and spices coming to one side. Use a spoon to baste them taking butter and spice and spooning that over the steaks over and over again. A soon as you have crust on the other side, take the pan and put it in the oven. Set the timer for 7 minutes if you like it rare, 8 minutes if you like it medium rare. Take it out, put them on a plate and let them sit for 8- 10 minutes. Magic happens. You will love it.

I grow 15 to 20 basil plants every year and make my own pesto sauce. I love the way it smells when I pick it and bring it into the house. THe whole family knows when I'm doing it because it perfumes the whole house which is is about 3500 SF.
